This conventional watermelon salad recipe capabilities crumbled feta and fresh mint. lightly pickled shallots and chopped pistachios make it tremendous! Recipe yields 6 to eight side salads.

ingredients
1 medium-to-huge shallot or ½ small pink onion, sliced very thinly (approximately ½ cup)
three tablespoons sherry vinegar or crimson wine vinegar





¼ teaspoon quality salt
three pounds ripe seedless watermelon (about ½ small spherical watermelon or four cups cubed), reduce into ¾″ cubes
½ cup crumbled feta (approximately 2 oz.)
⅓ cup roasted and salted pistachios, chopped
¼ cup greater-virgin olive oil
Small handful of fresh mint and/or basil leaves, torn if big, for garnish
Flaky salt or kosher salt, to flavor

In a small bowl, combine the sliced shallot with the vinegar and best salt. Toss to combine, and region in the fridge to lightly pickle while you prepare the closing ingredients (as a minimum 10 mins).

NOTES
prepare earlier: on account that watermelon starts liberating moisture once it comes into touch with salt, your first-rate bet is to arrange the cubed watermelon across a platter and store the whole thing separately until it’s close to serving time.
